What are Crock Pot Chicken Fajitas?
This is my Chicken Fajita recipe with marinade that you can prep for the freezer or make right away to put in the crock pot.
If you want to prep this easy meal, it took about 10 minutes with the kids as helpers, you can use the marinade recipe below put it in the freezer then put it in the crock pot when you are ready to use it! Or you can just dump it all in the crock pot and skip the marinade.
Start by mixing the marinade together in a baggie. Then add the sliced chicken and squish the bag around. Throw that in the freezer to use at a later date or in the fridge if you are planning on making these today.
When you are ready to use it put the mixture with chicken into the crock pot and cook on medium for 6-8 hours or chicken is at minimum 165 internal temperature.
When you are ready to eat, cut up the bell peppers and onion. Toss these in a saute pan with a little oil and start to cook. Shred the chicken from the crock pot and add it to the saute pan, with minimal juice. This helps to get rid of the crock pot chicken texture by adding a little crispness.
Next cover with some of the juice from the crock pot for flavor and enjoy as you want!
