Buffalo Chicken Egg Bowl

This is another variation of my favorite breakfast, the Egg Bowl!

I love egg bowls for many reasons. One is that, there is so much protein in these egg bowls it sets you up for a great day! Another is that you can customize it for whatever you are in the mood for or what your dietary needs are. And yet another reason is that you can meal prep them a couple of days in advance of when you need them.

Buffalo Chicken Egg Bowl

You can change the ingredients to include the fat content you want. Use full or low fat cheeses, whole eggs, or just egg whites for these awesome bowls!

Ingredients
  

  • 1 cup cottage cheese
  • 4 eggs
  • 1/2 cup cooked chicken or canned chicken
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup buffalo sauce
  • 1 sliced green onion
  • Salt to taste
  • Pepper to taste
  • 1/4 cup blue cheese crumbles* optional
  • 2 T ranch dressing or blue cheese dressing* optional

Method
 

  1. Spray a glass baking dish (these areĀ Ello ones) I šŸ˜them! Find them in my Amazon store) and put in the cottage cheese.
  2. Next whip two eggs in a bowl and pour over the cottage cheese. Add the cooked/canned chicken and stir in.
    Mix well and sprinkle with salt and pepper.
  3. Next, drizzle the buffalo sauce over the top. If using, top with blue cheese crumbles.
  4. Next, bake at 425 for 20-25 minutes or until the eggs are set to your liking.
  5. Drizzle with more buffalo sauce, ranch or blue cheese dressing if desired. Sprinkle with sliced green onion as garnish.
