  • 1 pound chicken
  • 1 T olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 – 1 tsp salt
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/2 tsp salt
  • 2 cups cottage cheese
  • 1-2 cups spinach
  • 1 cup spaghetti sauce
  • 1 cup mozzarella cheese

Method
 

  1. Cook the chicken: olive oil in a skillet and put the chicken in. Next sprinkle with the seasonings and cook until the internal temperature is 165.
  2. Cook the quinoa: Put the uncooked quinoa in a saucepan with the water. Simmer on low until the quinoa has soaked up all of the water and is soft.
  3. To assemble the bowls get out your favorite oven-safe meal prep dishes. Next layer 1/2 cup cooked quinoa on the bottom, smooth 1/2 cup cottage cheese over this layer. Next put about 1/4 cup torn spinach on top of the cottage cheese. Cover with 4 ounces of cooked chicken. Next drizzle 1/4 cup spaghetti sauce over the chicken. Finally layer 1/4 cup mozzarella cheese over the top.
  4. Next I baked mine to get the crispy cheese on top. Place the bowls in the oven and broil the cheese until it is the color you like, you could also skip this step and do it when you reheat it or just microwave them to reheat.
