4 chicken breasts
½ -¾ cup spaghetti or pizza sauce
½ – ¾ cup shredded mozzarella
Olive oil for frying
½ tsp garlic powder
½ tsp salt
¼ tsp ground pepper
½ tsp parsley flakes
First thaw out chicken or use fresh. Pound it out flat with a meat tenderizer, potato masher, or the bottom of a glass.
Then use some spaghetti sauce (I was trying to use this up from the weekend) and spoon a tablespoon or two on top. Next use a tablespoon or two of shredded mozzarella to sprinkle on top of the sauce.
Start on the smaller end and roll up so it makes a chicken spiral.
Heat olive oil in a pan and then place the chicken breasts in, seam side down. Sprinkle on seasonings from your cupboard. I used garlic powder, salt, pepper, and some parsley flakes. Cook for 5-7 minutes and flip. Cook until a meat thermometer reads at least 165.
Serve with pasta or a side salad for a delicious lunch or supper!
