Chickpea and Broccoli Stir Fry

Using plant proteins makes lunch/dinner come together in minutes! If you are looking for a quick recipe that tastes amazing this is it!

20 grams of protein will fill you up when you use 1/2 cup serving size of chick peas. Making this an extremely cost effective and delicious protein source. Bonus it is also extremely shelf stable meaning you can have it in the pantry whenever you are needing a quick meal.

Adding broccoli to this dish gives it a textural difference and makes it extremely satisfying. If you are using fresh broccoli just throw it right in the pan. If you are using frozen broccoli I would suggest heating it in the microwave first. This way some of the water will come off of it and you can still have a texturally interesting dish. If you just throw frozen broccoli in the wok or saute pan make sure the pan is set to a high heat to help reduce the water.

I found the bottle of Japanese BBQ sauce I used at Costco. I did search for it elsewhere and it is also sold at Target. This sauce was very flavorful and was so quick to use!

Makes 4 servings

1 can chickpeas (or Garbanzo Beans, they are the same)

10 ounces broccoli cut into florets

1 T sesame oil

1 clove garlic minced or crushed

1/4 cup -1/2 cup Bachans’s Japanese BBQ Sauce (found at Target or Costco)

1 tsp cornstarch

2 tsp water

1 cup uncooked rice

2 cups water or broth of choice

Open the chickpea/garbanzo beans can and drain. Pour contents onto a towel and let it absorb some of the moisture.

Rinse rice and then place it in a rice cooker or saucepan with water or broth.

If using a saucepan, bring to a boil and then turn to a simmer. Steam rice until the liquid has been absorbed and the rice is soft.

In a small dish, combine the cornstarch and water. Stir to make a slurry.

While the rice is cooking, place the sesame oil into a wok or large saute pan. Heat for a few minutes. Add garlic and cook for 30 seconds to 1 minute.

Add the chickpea/garbanzo beans and saute for a few minutes. Next, add broccoli and cook until it is beginning to turn soft.

Add the Bachan’s sauce and simmer for 2-3 minutes. Next, add the cornstarch and water slurry, this will help to thicken the sauce.

When the sauce has thickened to your liking, serve over rice and enjoy!
