What is Chocolate Covered Strawberry Bark?
Chocolate, strawberries, and vanilla make a perfect flavor combination in this yummy no-bake snack, plus frozen yogurt is a great way to cool off in the summer!
This recipe takes about 5 minutes to prepare, then freezes for a few hours, so you can easily break it apart. If you can’t wait, though, you can eat it with a spoon, and it tastes just as good :). All you need is strawberries, yogurt, chocolate, and a little protein powder, and you are well on your way to making your newest favorite healthy summer snack.
WARNING – it is addictive, and you will want to take it everywhere to share; however, it does melt fairly quickly, so make sure to keep it cold in the freezer until you are ready to eat or in a really cold cooler.

Makes 4 servings
1 cup plain Greek yogurt
1/4 cup vanilla protein powder
6-7 strawberries sliced (fresh or frozen work)
1/4 cup whole grain granola
1 tsp vanilla extract
1/3 cup mini chocolate chips
1 tsp coconut oil
Thinly slice the strawberries.
In a mixing bowl, mix the Greek yogurt, protein powder, and vanilla extract until smooth.
Put a piece of parchment paper on a cookie sheet or cutting board.
Dump the yogurt mixture onto the parchment paper. Using a spatula spread the yogurt mixture out smoothly on the paper in a thin layer.
Next, place the sliced strawberries over the top of the yogurt layer. Then sprinkle with granola.
Next place the chocolate chips and coconut oil in a bowl and melt them in the microwave until it is smooth and drippy.
Drizzle the chocolate over the yogurt, fruit, and granola layers.
Place in freezer for 2-3 hours or until set, the time will depend on how thick the yogurt layer is.
Break apart and store in the freezer, I love these containers for storing in the freezer!
