Makes 4 servings

4 tortillas
4-8 eggs (Depends on how hungry you are, 1-2 eggs per tortilla)
Vegetables needing to be used
Deli meat, leftover proteins, etc. need to be used
Cheese slices or shredded (1 slice or 2-3 T per tortilla)
Salt
Pepper
Cooking spray
Optional toppings: salsa, sour cream, etc.
Prepare vegetables by chopping or small dicing them.
Prepare deli meats or leftover proteins by chopping or small dicing them.
Get out a skillet or saute pan begin heating and spray with cooking spray.
Crack 1-2 eggs into the pan, sprinkle with salt and pepper.
Add vegetables, cheese, and proteins on top of the egg, if the yolk breaks that is ok.
Next, before the egg is fully cooked place a tortilla on top of it. Let cook until almost done.
Flip it over and cook until the tortilla has turned golden brown.
Next put on a plate and fold in half. Top with salsa, sour cream, etc. if it is on hand.
