Gingerbread Energy Bites

Energy bites make for really, really, really easy snacks that anyone in the family can pull out of the fridge and enjoy!

Gingerbread Energy Bites

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup ground flaxseed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt
  • 3 tablespoons peanut butter
  • 3 tablespoons molasses
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Method
 

  1. In a large bowl, combine the rolled oats, almond flour, flaxseed, cinnamon, ginger, nutmeg, cloves, and salt.
  2. Add the peanut butter, molasses, maple syrup, and vanilla extract to the bowl. Mix well until a sticky dough forms.
  3. If the mixture is too dry, add a teaspoon of water or almond milk at a time until it holds together.
  4. Use a tablespoon or small cookie scoop to form the dough into 1-inch balls. Roll between your palms to make them smooth.
  5. Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
  6. Transfer the bites to an airtight container and store in the fridge for up to a week or in the freezer for up to a month.
