Energy bites make for really, really, really easy snacks that anyone in the family can pull out of the fridge and enjoy!
Ingredients
Method
- In a large bowl, combine the rolled oats, almond flour, flaxseed, cinnamon, ginger, nutmeg, cloves, and salt.
- Add the peanut butter, molasses, maple syrup, and vanilla extract to the bowl. Mix well until a sticky dough forms.
- If the mixture is too dry, add a teaspoon of water or almond milk at a time until it holds together.
- Use a tablespoon or small cookie scoop to form the dough into 1-inch balls. Roll between your palms to make them smooth.
- Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
- Transfer the bites to an airtight container and store in the fridge for up to a week or in the freezer for up to a month.
