Gingerbread Cookie Overnight Oats

Makes 1 serving

1/2 cup rolled oats

1/2 cup unsweetened coconut milk

1/4 cup Greek yogurt (vanilla or plain)

2 tsp molasses

1-2 tsp maple syrup

1/2 tsp ground ginger

1/2 tsp cinnamon

1/4 tsp vanilla extract

1 tsp chia seeds optional

Mix all of these ingredients in your favorite single-serving size container.
