Greek Chicken Pita with Tzatziki Sauce

Ingredients
  

  • 2-3 chicken breasts
  • 1-2 T Cavender’s Greek seasoning or your favorite brand
  • Salt to taste
  • Pepper to taste
  • 4 pitas
  • 1 English cucumber small dice
  • 1/2 cup kalamata olives
  • 1/4 cup feta cheese
  • 8 cherry tomatoes sliced
  • 1/4 red onion sliced
  • Tzatziki sauce ingredients:
  • 3/4 cup plain Greek yogurt
  • 1/2 cup grated English cucumber squeeze out the water
  • 1 T lemon juice
  • 1 T olive oil
  • 1 garlic clove minced
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Prepare the chicken by sprinkling Greek seasoning, salt, and pepper on each piece to taste.
  2. Place in the air fryer and cook until the internal temperature reaches 165.
  3. Take it out and thinly slice it.
  4. While the chicken is cooking, prepare the tzatziki sauce. Grate the cucumber and drain excess water off of it. This will help the sauce last longer and be more flavorful.
  5. In a small bowl combine the Greek yogurt, cucumber, lemon juice, olive oil, minced garlic, dried dill, salt, and pepper. Taste it and adjust seasonings as needed. Let chill in the fridge until you are ready to use.
  6. Prepare the vegetables by washing and cutting them.
  7. Assemble the pitas by cutting the pita bread in half and opening the pocket. Stuff pitas with chicken, olives, onions, tomatoes, cucumbers, feta, and sauce.
  8. If using these for meal prep, combine everything that goes into the middle of the pita into your favorite lunch containers, but keep the pitas separate. Assemble when you are ready to eat.
