
Makes 6-8 servings
1 pound ground beef
1/2 onion finely chopped
2 large carrots finely chopped
2 stalks celery finely chopped
1/2 bell pepper finely chopped
2 garlic cloves minced or 1/2 tsp garlic powder
3 cups beef broth
1/4 cup ketchup
15 ounces of tomato sauce
3 cups noodles
1 1/2 shredded cheddar cheese
1/2 tsp salt
1/2 tsp pepper
In a large skillet brown the ground beef, breaking it into small pieces. Next add the carrots, onion, celery, bell pepper and garlic and a sprinkle of salt and pepper. Saute for a few minutes until the vegetables start to get a little bit soft.
Next add the broth, ketchup, tomato sauce, and noodles. Stir these in and let simmer until the liquid is absorbed by the noodles, 8-10 minutes. Next add half the cheese and stir it in. Top with the other half of the cheese and let it melt in before serving.
