Healthier Cheesy Crock Pot Chicken

Makes 4-6 servings

4-6 chicken breast

1/4 cup chicken broth

3/4 cup cottage cheese

1/4 cup cream cheese

2 T dry ranch seasoning

1/2 cup shredded cheddar cheese

4 – 6 strips bacon or bacon bits

1 green onion sliced (optional)

In a slow cooker or crock pot, place the chicken breasts in the bottom and cover with broth. Sprinkle the dry ranch seasoning over top. Next, put the cottage cheese and cream cheese. Cook on low for 5-6 hours or until the internal temperature reaches 165.

Next, remove the lid shred the chicken, and stir the cottage cheese and cream cheese in. Sprinkle with the shredded cheddar cheese. Put the lid back on while you cook the bacon.

Once the bacon is cooked, crumble it and sprinkle over the top of the chicken mixture with the green onions.

Serve over salads, or with buns, toast, crackers, etc.
