Healthier Scrambled Eggs

Makes 2 Servings

4 eggs

1/2 cup cottage cheese

1/4 – 1/2 a bell pepper chopped

1/4 of an onion chopped

Salt

Pepper

1-2 tsp butter

Crack eggs in a bowl and whisk so the yolk and whites are combined.

Chop pepper and onion.

Heat a saute pan on the stovetop, and add butter. Use a spatula to move the butter around to cover the whole pan.

Add the pepper and the onions to saute and add flavor. When they start turning slightly brown on the outside add the 1/2 cup of cottage cheese, stirring to melt the cheese curds down.

Next add the eggs, salt, and pepper. Stir until the eggs are cooked through and no longer look wet, or to your liking.

Serve with avocado toast, toast, or in a burrito.
