Healthy Baked Oatmeal Breakfast Cookies

Ingredients
  

  • 1 1/4 cups old fashioned oats
  • 1 1/2 cups old fashioned oats used to make oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 5 T coconut oil melted
  • 5 T honey or maple syrup
  • 1/2 cup smooth applesauce
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup mini chocolate chips

Method
 

  1. Preheat oven to 350 F.
  2. Put 1 1/2 cup old fashioned oats into a blender. Blend until it is a powder, this is your oat flour.
  3. Next into a bowl put the oat flour, rolled oats, baking soda, and salt. Stir to combine.
  4. Add the melted coconut oil, honey or syrup, applesauce, vanilla, and eggs. Stir until everything is combined.
  5. Fold in the chocolate chips.
  6. Next put portion out onto a cookie sheet using a cookie scoop. These do spread some so make sure they are not touching.
  7. Bake for 12-15 minutes. Check the edges to see if they are getting crispy and the tops are golden brown.
