Makes 4-6 servings
1 T butter
1 cup sliced onion
6 cups mushrooms (they shrink down)
2 1/2 tsp dried thyme
3/4 tsp dried dill
3/4 tsp salt
1/4 tsp black pepper
3 cloves of garlic minced
3 T white wine vinegar
2 1/2 pounds flank steak (no bone)
3/4 cup plain Greek yogurt
4 cups uncooked egg noodles
Saute onions in 1 T of butter to develop a caramelized flavor. You can skip this step, but it really makes the flavor come through if you do it.
Add the onions, mushrooms, thyme, dill, salt, pepper, minced garlic, wine vinegar, and flank steak to the crock pot. Cook on low for 5-6 hours.
Boil the noodles according to the package.
Stir in the Greek yogurt. While you are stirring it, make sure to shred the beef.
Serve the stroganoff over the cooked noodles and enjoy!
