Healthy Crunch Bar

Makes 12 bars

2/3 cups quinoa

1 tsp coconut oil (for roasting)

1/2 cup honey

1 tsp vanilla

1 T coconut oil (for chocolate mix)

4 T cocoa powder

2/3 cup rolled oats

First toast the quinoa in 1 tsp of coconut oil. Do this in a saucepan, stir the quinoa in the oil until it smells toasted. It will burn quickly so keep an eye on it.

Next add honey, cocoa powder, vanilla and 1 T coconut oil to the pan. Stir to mix, then wait for it to boil. Boil for 3 minutes.

Next add the rolled oats to mixture and stir until coated in chocolate.

Pour into an 8×8 pan and flatten out too desired thickness. Cut into bars and enjoy!
