Healthy One Pot Taco Skillet

Makes 6 servings

1 pound browned ground meat (I used beef)

1 can rotel style tomatoes

2 T taco seasoning

2 cups egg noodles

1 1/2 chicken broth

1 1/2 cup milk

1 T cornstarch

1/4 cup water

1 cup cottage cheese

1 cup shredded cheddar cheese

Salt and pepper to taste (start with 1/4 tsp)

Brown ground meat with salt and pepper in a skillet and drain.

Next, add a can of rotel-style tomatoes and taco seasoning to the meat, and stir.

Add the egg noodles, milk, and chicken broth. Let this simmer until the noodles begin to get soft.

While that is cooking mix the cornstarch and water together to make a slurry, this helps it thicken if there is extra liquid. Pour this into the mixture and stir.

Next add the cottage cheese and mix until it is stirred in and starts to melt. This makes it really creamy.

Finally, add a layer of cheese over top and let it melt.
