Homemade Ice Cream

2 cups whipping cream

1 cup milk

2/3 cup white sugar

4 egg yolks

2 tsp vanilla

Sprinkle of salt

First heat the milk, cream and sugar in a pan until the sugar is melted. While that is heating whisk the egg yolks in a bowl until they are slightly bubbly.

Then temper the mix by adding small amounts of the milk/cream mix to the eggs. This heats the yolks slowly so the eggs don’t coagulate (get chunky) in your ice cream. Then slowly mix the egg mixture into the rest of the milk/cream mixture.

Heat slowly until the mixture coats the back of the spoon. Add the vanilla and a pinch of salt.

Then pour into a different bowl and cook overnight. Next pour it into the ice cream machine and mix away until it is thickened!
