Lasagna roll-ups are a delicious twist on a classic lasagna meal. You can customize this recipe to use ricotta cheese and other vegetables if you would like too to make them a healthy lasagna roll-up.
Lasagna roll-ups can make for an easy meal prep for your weeknight dinners. I make the rolls and then put them in my Souper Cubes to freeze and then pull them out for a quick lunch meal at work or put them in the oven for an easy week night dinner.

- First cook the noodles so they are al dente, do not over cook as they will be hard to work with and mushy. Brown the hamburger meat and add salt and pepper if you like.
- While those two things are cooking mix together the cheeses, egg, and spices. Stir well.
- When the noodles are cooked lay them on a cutting board. Prepare a 9×13 inch pan by spreading a small amount of sauce on the bottom. Then start layering the filling on a noodle. I did cheese, meat, spinach. Then start on one end and roll it up. Place seam side down in the pan.
- Cover with the rest of the sauce, making sure to cover the whole noodle (otherwise they get hard and crunchy) and sprinkle cheese over them if you want.
- Next bake at 350 for 15-20 minutes or until cheese on top is melted and browned. You can also broil the top of the cheese to get a good crust.
- If you want to freeze these put them in the pan but don’t bake them. Then pull them out pop them in the oven and bake for closer to an hour.
