Maple Pumpkin Baked Oatmeal Cups

Makes 12 cups

2 cups rolled oats

1 tsp baking powder

1 1/2 tsp pumpkin pie spice

1/2 tsp cinnamon

1/2 tsp salt

1 1/2 cup milk of choice

1 cup canned pumpkin puree

1/4 cup maple syrup

1 tsp vanilla

1/2 cup vanilla protein powder

1/4 cup chopped pecans

Cooking spray

Topping

1/4 cup mini chocolate chips

1/4 cup chopped pecans

Preheat oven to 375 degrees F.

Put the oatmeal, baking powder, pumpkin pie spice, cinnamon, and salt in a bowl. Mix and make a well.

Pour in the milk, pumpkin puree, maple syrup, vanilla, and chopped pecans. Stir until well combined.

Spray a muffin tin with cooking spray.

Fill each cup 3/4 full. Top each cup with a few chocolate chips and pecans.

Bake for 10-14 minutes, or until a toothpick comes out clean.
