
Pina Colada Overnight Oats
½ cup rolled oats
¼ cup plain Greek yogurt
½ cup coconut milk
3 T chopped pineapple packed in pineapple juice
2 T pineapple juice
1 T unsweetened coconut flakes
¼ tsp vanilla
Mix everything in a single serve container or in a large bowl and divy it up. Keep in the fridge overnight or until you are ready to eat them. I will try to eat these 4 days. Because I used the juice from the pineapple in the can I did not use any other sweeteners. If you like your oats sweeter you can add some sugar, honey, agave nectar, etc. I would start with a small amount (1 tsp) and add more to your liking.
