Pizza craving fix plus 31 grams of protein? Sign me up!
I love pizza (if you can’t tell from my recipes) and I love finding ways to get that pizza craving fixed without overdoing it. This is my newest favorite way to accomplish this. It is high protein and low carbs, although I think it would be great in a tortilla or with a piece of toast if you have room for it! You can pick whatever type of carb fits your lifestyle gluten-free, low-carb, regular, etc!
Makes 1 serving

1/2 cup cottage cheese
2 eggs
1/4 cup pizza sauce (make your own with tomato sauce and Italian seasoning)
1/4 cup mozzarella cheese
Pizza toppings – pepperoni, peppers, onion, ham, sausage, etc.
Spray a glass baking dish (these are Ello ones I 😍them! Find them in my Amazon store) and put in the cottage cheese. Next whip two eggs in a bowl and pour over the cottage cheese. Mix well and sprinkle with salt and pepper. Next, drizzle the tomato sauce over the top.
Place pizza toppings on in whatever layering you want. I wanted veggies the hubs wanted pepperoni. Next, bake at 425 for 20-25 minutes or until the eggs are set to your liking.
