Poached Egg Avocado Toast

Avocado toast is another very versatile breakfast. You can easily change the spices to what you want them to be for your mood.

I love to use poached eggs on top of the avocado toast because they are so delicate and delicious. Poaching is also a great way to cook food and keep it very healthy. If you haven’t ever poached anything, it may seem strange at first because you are putting things in water to cook. But, believe me, once you embrace poaching you will be poaching so many different foods! It is a great healthy meal prep!

Poached Egg Avocado Toast

Ingredients
  

  • 4 eggs
  • 2 slices sourdough bread
  • 1 avocado
  • 1 T white vinegar
  • 1 tsp Everything Bagel Seasoning
  • Salt to taste
  • Pepper to taste

Method
 

  1. Cut the avocado in half. Take the pit out of it and squeeze the green part into a bowl.
    Mash it and add salt and pepper if desired.
  2. To poach the egg, fill a sauce pan with water and bring it to a light simmer, add the white vinegar (it helps hold the egg togehter).
  3. Crack the eggs individually into a small bowl. I like to use one egg in a custard cup at a time.
  4. Take a slotted spoon and swirl the water with it. In the middle of the swirl, place the edge of the custard cup and let the egg fall into the water.
  5. Cook for 4-5 minutes, or until the egg is set to your liking.
  6. Take out of the water.
  7. While the eggs are cooking, lightly toast the sourdough bread.
  8. Spread the toast with avocado mash.
  9. Place eggs on top of the bread and avocado. Sprinkle with Everything Bagel Seasoning.
