Ingredients
  

  • 1/2 cup quinoa
  • 1 cup steel cut oats
  • 2 tsp coconut oil
  • 3 cups of water
  • 1 cup of milk of choice
  • 1 T vanilla
  • Oatmeal toppings – strawberries blueberries, honey, agave nectar, granola, mango, etc. *Savory Toppings are also good – scrambled eggs, bacon, sausage, etc.

Method
 

  1. First melt coconut oil in a saucepan. Then add the quinoa and steel cut oats. Cook these until they smell toasted.
  2. Add the water and the milk. Cook for 15-20 minutes on low heat, or until all of the liquids have been absorbed. Stir once in a while so it does not burn on the bottom.
  3. Next add vanilla (omit if making savory).
  4. Portion out, put on your favorite toppings, and enjoy!
  5. This keeps really well in the fridge so you can make a large batch and have breakfast for the week. You may want to put a little extra milk in to make it creamy again if doing this. Heat in the microwave.
