Strawberry Cheesecake Protein Bars

Strawberry Cheesecake Protein Bars

Ingredients
  

  • 1 cup low-fat cottage cheese
  • 1 cup vanilla protein powder
  • 3/4 cup almond flour
  • 1/4 cup oat flour or finely ground oats
  • 1/4 cup Greek yogurt
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries diced
  • 1/2 teaspoon salt
  • 1/4 cup almond milk adjust for consistency

Method
 

  1. In a blender or food processor, blend the cottage cheese until smooth and creamy.
  2. In a large bowl, combine the blended cottage cheese, Greek yogurt, maple syrup, and vanilla extract. Mix well.
  3. Add the vanilla protein powder, almond flour, oat flour, and salt to the wet ingredients. Stir until well combined.
  4. Gradually add the almond milk to the mixture until it reaches a thick but spreadable consistency.
  5. Gently fold in the diced strawberries, make sure they are evenly distributed throughout the mixture.
  6. Line an 8×8 inch baking dish with parchment paper.
  7. Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula.
  8. Refrigerate the mixture for at least 2 hours, or until it firms up enough to be cut into bars.
