Chicken and Veggie Kabobs

Kids love kabobs and so do adults!

There is something about eating food off a stick that is super fun and appealing to everyone. It is also a fun way to get kids involved in meal prep!

Sometimes I get nervous about the food getting burnt or the meat not getting done in the middle so I will put like foods on the same skewer. This helps me feel better about cooking times. Then we take them all off and re-stick them with what each person wants on their skewer. This makes the meal extremely kid-friendly and everyone is happy!

Chicken and Veggie Kabobs

Prep Time 15 minutes
Servings: 4 servings
Course: Main Course
Cuisine: American

Ingredients

  • 3 chicken breast cut into pieces
  • 2 T olive oil
  • 3 T favorite seasoning blend
  • 1 bell pepper large dice
  • 1 onion large dice
  • 1-2 cups cherry tomatoes
  • 1 zucchini thick slices

Method

  1. Prepare all of the pieces by cutting them into similar sizes.
  2. Heat the grill
  3. Put the chicken in a mixing bow and coat with olive oil and spice blend of your choice.
  4. Begin skewering the meat onto the sticks. You can alternate all of the veggies and the meat in a pattern, but I like to keep all like items on the same skewers for cooking to the same temperature.
  5. After all food has been placed on sticks, grill for about 10-15 minutes or until the inside of the chicken is 165 degrees F.
  6. Eat and enjoy!
