- Roast some potatoes – Preheat oven to 425.
- I used about 5 Yukon Gold potatoes, this will change depending on how big or small your potatoes are, lightly oil with spray or a small amount and add seasoning. I used Farmhouse Butter Seasoning.
- Roast these potatoes at 425 for 20ish minutes, checking to see if they are done or not and adding more time if they are not crispy enough for you.
- Next, I roasted some broccoli, I used 2 cups of broccoli and again lightly sprayed them with some oil or you can lightly drizzle some on. Then I used salt and pepper on these. I roasted them for 10ish minutes then started checking on them so they didn’t get too crisp.
- I sauteed a couple of chicken breasts on the stovetop, by first chopping it into smaller pieces. Then I put the chicken in a hot pan and let it cook until the temperature was 165 internally. I seasoned it with Farmhouse Butter.
- Lastly I used my cottage cheese ranch recipe (16 ounces of cottage cheese and a Hidden Valley Dips packet blended together in a blender until smooth) to top this all offf.
- When everything was cooked, I layered 1 cup of roasted potatoes on the bottom, then put 1/2 cup broccoli on top, and 4 ounces of cooked chicken. Then I drizzled 1/4 cup cottage cheese ranch over the top and sprinkled it with 1 T of bacon bits!
