Chicken Bacon Ranch Bowl

Servings: 4 servings
Course: Main Course

Ingredients

  • 5 yukon gold potatoes
  • 1 T olive oil
  • 2 tsp Farmhouse Butter Seasoning
  • 2 cups broccoli florets
  • 2 tsp olive oil
  • Salt
  • Pepper
  • Garlic powder
  • 2 chicken breasts
  • 1 T olive oil
  • 2 tsp Farmhouse Butter Seasoning
  • 2 cups cottage cheese
  • 1 dry ranch packet
  • 4 T bacon bits

Method

  1. Roast some potatoes - Preheat oven to 425.
  2. I used about 5 Yukon Gold potatoes, this will change depending on how big or small your potatoes are, lightly oil with spray or a small amount and add seasoning. I used Farmhouse Butter Seasoning.
  3. Roast these potatoes at 425 for 20ish minutes, checking to see if they are done or not and adding more time if they are not crispy enough for you.
  4. Next, I roasted some broccoli, I used 2 cups of broccoli and again lightly sprayed them with some oil or you can lightly drizzle some on. Then I used salt and pepper on these. I roasted them for 10ish minutes then started checking on them so they didn’t get too crisp.
  5. I sauteed a couple of chicken breasts on the stovetop, by first chopping it into smaller pieces. Then I put the chicken in a hot pan and let it cook until the temperature was 165 internally. I seasoned it with Farmhouse Butter.
  6. Lastly I used my cottage cheese ranch recipe (16 ounces of cottage cheese and a Hidden Valley Dips packet blended together in a blender until smooth) to top this all offf.
  7. When everything was cooked, I layered 1 cup of roasted potatoes on the bottom, then put 1/2 cup broccoli on top, and 4 ounces of cooked chicken. Then I drizzled 1/4 cup cottage cheese ranch over the top and sprinkled it with 1 T of bacon bits!
