Cilantro Lime Rice

Looking for an easy side dish?

This copycat version of Chipotle Cilantro Lime Rice will have you making it again and again! It costs pennies compared to what it costs at the restaurant and you can adjust the lime/cilantro ratios to make sure it is exactly what you want!

I like to use this rice as a side dish for chicken or fish tacos or the insides of a Cilantro Lime Chicken Burrito. It brings so much flavor to the main meal without adding a ton of fat and calories because it is just steamed rice with some extra pizzazz!

This is a super easy recipe that will only take about 20 minutes, just long enough for the rice to cook and you will be ready to go!

Cilantro Lime Rice

Servings: 4 servings
Course: Side Dish

Ingredients
  

  • 1 cup rice
  • 2 cups broth of choice
  • 1 T oil
  • 1 garlic clove or 1/2 tsp garlic powder
  • 1 tsp salt
  • 3 T lime juice
  • 1/2 – 1 cup cilantro chopped

Method
 

  1. In a medium sauce pan heat the oil. Pour in rice and cook until it is translucent and turning lightly brown.
  2. Add broth, garlic, salt, and boil. Once boiling bring it down to a simmer and cover. Let sit for 10-12 minutes. Check to see that all of the liquid is absorbed and rice is tender.
  3. Fluff with a fork and put in a bowl. Sprinkle with lime juice and stir in cilantro.
