Cranberry Turkey Wrap

This is a great wrap to make any time of year, but it is really a great way to use up some leftovers from Thanksgiving or other big holiday meals your family may be having!

This recipe is written for deli turkey, but leftover turkey would be great in it and it is also calling for dried cranberries, but using a smear of cranberry sauce if you have any left over would be chef’s kiss delicious with the cream cheese spread!

Cranberry Turkey Wrap

Servings: 4 servings
Course: Appetizer, Main Course, Snack

Ingredients
  

  • 4 whole grain tortilla or low-carb wrap
  • 12 ounces sliced turkey breast lean, deli-style or leftover cooked turkey
  • 6 tablespoons dried cranberries
  • 1/4 cup cream cheese
  • 1/4 cup spinach or Romaine lettuce
  • 1/2 cup shredded carrots
  • 1/4 cup chopped pecans
  • 1/4 cup feta cheese
  • 1 apple sliced
  • Salt and pepper to taste

Method
 

  1. Lay out the wraps. Spread cream cheese equal and evenly over the tortillas.
  2. Place about 3 ounces of turkey slices on each of the wraps, followed by the spinach, shredded carrots, feta, apple slices, and dried cranberries. Then sprinkle the nuts on top.
  3. Sprinkle with salt and pepper.
  4. Fold in the sides of the tortillas and roll them tightly from the bottom up.
  5. Wrap the finished roll in foil or parchment paper for easy portability or put in a glass lunch container.
