Ingredients
  

  • 8 eggs
  • 1/2 cup blended cottage cheese
  • 1/4 cup mayo
  • 1/2 cup chopped pickles
  • 1 tsp yellow mustard
  • 1 tsp lemon juice
  • Salt and pepper to taste

Method
 

  1. First hard cook the eggs, by placing them in a pot of water and letting them simmer for about 10 minutes.
  2. Cool and peel them.
  3. Then place in a bowl and mash.
  4. Add blended cottage cheese, mayo, pickles, salt and pepper, a dash of lemon juice, and about 1 tsp yellow mustard.
  5. Stir it all up and portion out.
  6. Keep cold until you are ready to eat, serve with tortillas, wraps, lettuce, carrots, crackers, etc.
