Method
- First hard cook the eggs, by placing them in a pot of water and letting them simmer for about 10 minutes.
- Cool and peel them.
- Then place in a bowl and mash.
- Add blended cottage cheese, mayo, pickles, salt and pepper, a dash of lemon juice, and about 1 tsp yellow mustard.
- Stir it all up and portion out.
- Keep cold until you are ready to eat, serve with tortillas, wraps, lettuce, carrots, crackers, etc.
