Your family will love having this on your meal plan rotation. It is easy to double or triple (and still only use one pot) so you can have a delicious dinner, and then use your SouperCubes to perfectly portion the meal prep part to freeze in either single servings for lunches or family sized cubes for easy dinner prep in the future.

Not only is this an excellent recipe for meal prepping and for dinner but it is also extremely budget friendly, and who isn’t looking for cost effective recipes these days? This recipe should be able to be made with $10 or under! Look for on sale chicken breasts or buy in bulk – or if you can’t find that you can easily buy black beans to add protein plus fiber! You can also use bullion cubes instead of broth if you have that on hand.

This is the best soup to make for an easy meal plus meal prep.

Why You’ll Love This Enchilada Soup

There are many reasons why you will love having this enchilada soup recipe at your disposal. One of them being it is a one pot meal. One pot meals mean you will be out of the kitchen in no time because you have less dishes! Another great reason for one pot meals means all the flavor stays in one place. There won’t be any transfers and leaving the bits and flavorful pieces stuck to the other pan.

Another reason is that this is a really family friendly meal. It is a creamy soup, loaded with protein and veggies, so parents love it and the flavor and familiar ingredients mean the kids love it. You can easily make this once a week for your family without anyone getting tired of it.

Not into it being super spicy? No worries! Just adjust the taco seasoning amount to be what your family likes. Always start with a small amount of seasoning and work your way up if you don’t like things to strong. Just taste it and add more if you need it. Also, remember things get spicier if they sit.

Not only is this a delicious meal, but it is a one-pot meal prep. This enchilada soup is so easy to scale up so you can make it once and have delicious dinners or take along lunches for the rest of the month. As mentioned above using the SouperCubes means you can easily freeze your meal-prepped soup into the perfect portion. Then all you have to do is thaw, heat, and eat! This literally takes like 5 minutes so dinner can be done in a flash in the future!

Lastly, this is a really budget-friendly recipe. You can buy all the ingredients on sale and store or if you are going to the store today, it is mostly just pantry staples and can be made for $10 or under!

Tips for the Best Enchilada Soup

If you are looking to change the flavor up or you don’t have time to cook chicken, buy a rotisserie chicken and just chop it up (this can also be stretched to use on a different recipe if you don’t use it all).

You can change the flavors and textures of this enchilada soup easily too to add variety. Just dig through the pantry and find a can of black beans or a can of corn. These are quick, easy, budget friendly ways to change the soup to keep it interesting for your frozen meal prep or if you find yourself making this a lot throughout the week.

You can also use canned chicken if you don’t have time to cook chicken or go to the store for a rotisserie one. Canned chicken is shelf stable and you can make sure you always have it on hand for a quick meal.

I usually use Neufchatel cheese in this enchilada soup instead of the cream cheese and it saves some fat and calories from the day and makes the over soup a little lighter in that area. However, if you use regular cream cheese it is still a protein rich and healthy soup option.

Meal Prep and Storage Tips for Enchilada Soup

After making the soup, you can portion it out into your bowls for meal prep and let it cool entirely before storing it in the fridge for up to four days for quick lunches for the work week.

You can also freeze it as mentioned above. Portion it out and then let it cool before storing in the freezer. This can last in the freezer for a couple of months, make sure to label and date anything in the freezer so you don’t forget about it!

To reheat the soup you can throw a frozen chunk into the crock pot so it is ready to go when you get home, you can thaw it out and put it in a pan on the stove top, or use the microwave. All really quick and easy ways to get supper on the table!

Ingredients

  • 2 chicken breasts
  • 1/4 onion chopped
  • 1 green pepper chopped
  • 1/2 – 1 tsp garlic powder depending on how much you like
  • 1 T butter
  • 6 ounces cream cheese
  • 2 10 ounce cans of rotel style tomatoes with juice
  • 2 1/2 cups chicken broth
  • 1/2 cup milk
  • 3 T homemade taco seasoning or one packet
  • Salt and pepper to taste

Method

  1. Poach chicken in water with some fajita or taco seasoning. Do this by filling a saucepan with water and putting the chicken breast in. Boil/simmer it until it reaches a 165 internal temperature.
  2. Remove from water and drain the water. Then cut the chicken into small cubes.
  3. While the chicken is poaching, chop the onion and green peppers. When the chicken is done cooking add them to the saucepan with 1 T butter, and saute. Then add the cream cheese and melt it a little.
  4. Next, add all the other ingredients. Simmer until everything is heated through.
  5. The longer this soup simmers the spicier it gets, so taste as it is cooking so you can stop when you like it!
