Egg salad is a perfect dish for the summer! It is cool and requires very little heating tools to make.
It is also extremely high in protein! This version keeps a little of the mayo to keep it feeling just like a regular egg salad recipe but uses avocado for healthier fats, vitamins, and minerals instead of the full amount of mayo.
Make sure to taste as you go so you can change the spices to your liking!

- Hard cook the eggs, peel, and chop.
- Slice the green onion and small dice the Roma tomato.
- Mix in the avocado, mayo, mustard, white wine vinegar and seasonings.
- Taste and adjust the salt and pepper as needed.
