Healthier Egg Salad

Egg salad is a perfect dish for the summer! It is cool and requires very little heating tools to make.

It is also extremely high in protein! This version keeps a little of the mayo to keep it feeling just like a regular egg salad recipe but uses avocado for healthier fats, vitamins, and minerals instead of the full amount of mayo.

Make sure to taste as you go so you can change the spices to your liking!

Healthier Egg Salad

Servings: 4 servings

Ingredients
  

  • 4 hard boiled eggs
  • 2 egg whites
  • 1 avocado
  • 2 T mayo
  • 1-2 tsp white wine vinegar
  • 1 small roma tomato diced
  • 2 green onions
  • 1 tsp yellow mustard
  • Salt to taste
  • Pepper to taste

Method
 

  1. Hard cook the eggs, peel, and chop.
  2. Slice the green onion and small dice the Roma tomato.
  3. Mix in the avocado, mayo, mustard, white wine vinegar and seasonings.
  4. Taste and adjust the salt and pepper as needed.
