If your family is like mine, they love pizza! It doesn’t matter what time of day it is, if I suggest pizza the kids are ready for it.
To make a lighter breakfast pizza swap out the traditional cheese sauce or breakfast gravy with regular pizza sauce. This also helps boost the vegetable content for the day!
I start with eggs and then rifle through the fridge to find what other vegetable toppings we have. Sometimes the kiddos like to add breakfast sausage, bacon bits, or ham. These are all great ways to increase the protein of this recipe too!

- Crack the eggs and whisk in a bowl. Pour into a heated frying pan and season with salt and pepper.
- Push the eggs around the pan as they cook to scramble them.
- Prep the veggies by washing and cutting them. You can also saute them if you like after cooking the eggs.
- Place the tortilla in a frying pan so it lays flat. Then spread with pizza sauce. Next top with your vegetables and scrambled eggs. Sprinkle with cheese.
- Next turn the pan on low heat and cover with a lid. The lid helps keep the heat in so the cheese will melt. Keep the heat low or the tortilla will burn.
- When the cheese is melted, serve! You can also put it under the broiler for a few seconds to make the cheese nice and brown if you like!
