Healthy Breakfast Pizza

Ingredients
  

  • 4 tortillas
  • 4 egg scrambled
  • 1/2 cup shredded spinach
  • 1/2 cup onion chopped
  • 1/2 cup bell pepper diced
  • 8 cherry tomatoes sliced
  • 1/2 cup mozzarella cheese more if you like
  • 1/2 cup pizza sauce more or less to your liking

Method
 

  1. Crack the eggs and whisk in a bowl. Pour into a heated frying pan and season with salt and pepper.
  2. Push the eggs around the pan as they cook to scramble them.
  3. Prep the veggies by washing and cutting them. You can also saute them if you like after cooking the eggs.
  4. Place the tortilla in a frying pan so it lays flat. Then spread with pizza sauce. Next top with your vegetables and scrambled eggs. Sprinkle with cheese.
  5. Next turn the pan on low heat and cover with a lid. The lid helps keep the heat in so the cheese will melt. Keep the heat low or the tortilla will burn.
  6. When the cheese is melted, serve! You can also put it under the broiler for a few seconds to make the cheese nice and brown if you like!
