This is a great food to use with kiddos or if you are just wanting a really quick easy breakfast you can make it in minutes and run out the door.
There is banana for fiber, carbs, and lots of vitamins and minerals. Then there is a delicious layer of peanut butter for a little protein and fats, plus the amazing taste of peanut butter which is a classic at breakfast time. Then the whole wheat tortilla for more healthy carbs and a little extra protein.
To make this yummy, easy breakfast more kid-friendly after rolling up the banana in the tortilla slice it so it is easy for them to pick up and eat.
Also, make sure to spread the peanut butter all the way to the edge of the tortilla so it will actually stick together when you roll it up. Otherwise, it will flop open.

- Place a whole wheat tortilla on a cutting board.
- Spread a thin layer of peanut butter over the entire surface of the tortilla
- Sprinkle your desired toppings evenly over the peanut butter, make sure there is some peanut butter exposed or it won’t stick to the banana.
- Peel the banana and place it on the tortilla. If the tortilla doesn’t stick to the banana spread a little more peanut butter on the banana too.
- Place the banana on one edge of the tortilla. Roll the banana up into the tortilla.
- Enjoy or slice into coins.
- You can also freeze these for a different texture or fast meal prep.
