Potato Nachos Sheet Pan – Easy Family Dinner Idea

I love nachos, I love potatoes, and I love one-pan sheet pan meals! This combo came together very quickly so supper was on the table in just about 30 minutes. Which was perfect because the kiddos were starving!

This is another dish that is extremely customizable for each family member. I made the sheet pan into quadrants and I put the toppings on that everyone likes. Some of us like sour cream, some like onions, some don’t like cheese, and some don’t like salsa. All of that can easily be accommodated on this sheet pan meal.

Cut the potatoes bigger or smaller for your family’s liking. Just remember, larger cuts of potatoes take longer to cook. Also, I love Yukon Gold potatoes for this and for baking. They hold their shape and they seem to cook a little faster than others, plus they taste amazing!

Potato Nacho Sheet Pan Meal

Ingredients
  

  • 4-5 Yukon Gold potatoes
  • 1 T olive oil
  • 1 pound ground beef/turkey
  • 3 T or 1 packet taco seasoning
  • 1 cup shredded Mexican blend cheese
  • Salt to taste
  • Pepper to taste
  • Toppings: diced tomatoes sliced jalapenos, black olives, green onion, bell peppers, guacamole, sour cream, salsa

Method
 

  1. Preheat oven to 425 degrees F.
  2. Wash and cut the potatoes into eighths.
  3. Get out a cookie sheet and line with parchment paper.
  4. Spread the potatoes out across the sheet pan and drizzle with olive oil.
  5. Sprinkle with salt and pepper toss to coat.
  6. Put potatoes in the oven and begin baking.
  7. While the potatoes are baking brown the ground beef and drain the fat.
  8. Add the taco seasoning and stir in.
  9. Take the potatoes out of the oven and check for doneness, if they aren’t totally done that’s ok.
  10. Spread the taco meat over the top of the potatoes and then sprinkle with the cheese.
  11. Put the sheet pan back in the oven and cook until the potatoes are fork tender.
  12. Take them out and put on your favorite nacho toppings.
