Quinoa Salad

Quinoa is a very healthy and versatile grain. It is so easy to cook and use. I like to use mine like rice and use it a lot for side dishes or as the base for the main course.

This particular salad recipe can be either the side or the main too! Quinoa provides a lot of plant protein and so do the beans which will keep you feeling full and satisfied no matter how you use this dish.

Quinoa Salad

Ingredients
  

  • 1 cup uncooked quinoa
  • 1 3/4 cup broth vegetable or chicken
  • 1 tsp garlic powder
  • 1 cup of corn
  • 1 can black beans
  • 1 small handful cilantro about 1/4 cup chopped
  • 5 slices grape tomatoes
  • 1/4 of red onion chopped
  • 1/2 bell pepper any color
  • 3 T lime juice
  • 2 T olive oil
  • 1 T honey
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper

Method
 

  1. Put these three ingredients into a saucepan and simmer. Once simmering cover with lid and let steam until all liquid is absorbed.
  2. Chop or slice all of these and place in a mixing bowl.
  3. Mix the lime juice, oil, honey, chili powder, cumin, salt, and pepper together and pour over veggies.
  4. When quinoa is cooked mix it in and let sit. This can be served warm or cold
