- Put these three ingredients into a saucepan and simmer. Once simmering cover with lid and let steam until all liquid is absorbed.
- Chop or slice all of these and place in a mixing bowl.
- Mix the lime juice, oil, honey, chili powder, cumin, salt, and pepper together and pour over veggies.
- When quinoa is cooked mix it in and let sit. This can be served warm or cold
