Ingredients
  

  • 2-3 chicken breasts
  • 1 ½ tsp Mrs. Dash Original seasoning
  • ½ tsp salt
  • ¼ red onion chopped or yellow onion if you want sweeter
  • 2 stalks celery chopped
  • 1 bell pepper any color chopped
  • 1/4 cup mayo
  • 1/4 cup Greek yogurt
  • 1 T dry ranch seasoning
  • 1-2 tsp lemon juice

Method
 

  1. Cook chicken by poaching it in water. Place chicken breasts in a sauce pan with water. Add in the Mrs. Dash seasoning and salt. Next turn water on and let chicken simmer until it reaches 165 when using a thermometer, if using thawed chicken this takes about 10 minutes. If you are using frozen chicken this can take 15 to 20 minutes depending on how thick they are.
  2. Chop onion, celery and bell pepper, put in a bowl. Chop the chicken very finely, and let cool. Once chicken is cooled place in the bowl too.
  3. Stir in the mayo, ranch seasoning, and lemon juice.
  4. Serve cold on a salad, sandwich, or cucumbers.
