Roasted Asparagus

My dad and I used to walk down the gravel road looking for asparagus patches to pick in the springtime. At the time I didn’t like asparagus, but going hunting for it was fun!

Now, I love asparagus and think it pairs perfectly with basically any meal. The key for me and the kiddos in my house is to roast it. They love the tops when they are buttery and salty and I get to eat the bottoms :).

Roasted Asparagus

Servings: 4 servings
Course: Side Dish

Ingredients
  

  • 1 bunch asparagus
  • 1 T olive oil
  • 1-2 T butter
  • 1/2 – 1 tsp salt
  • 1/2 – 1 tsp pepper
  • 1/2 – 1 tsp garlic powder

Method
 

  1. Preheat oven to 425 F.
  2. Lay the asparagus out evenly on a cookie sheet with sides.
  3. Cover asparagus with olive oil, thinly slice the butter and lay it evenly over the top of the asparagus.
  4. Sprinkle with spices, use more of less of the spices depending on your preferences. You can always add more, but you can’t always wipe it off.
  5. Roast for 10-15 minutes or until they are starting to char.
