Roasted vegetables are the easiest side and they go with everything! If you think you don’t like vegetables, try them roasted.
I also suggest varying the spices you use to change the flavor of them. Buy some seasoning blends you think sound good and then try them on these roasted vegetables. My favorite go to for seasoning roasted vegetables is a little salt, pepper, and garlic powder. Put all the veggies, a drizzle of olive oil, and the spices in a bowl with a lid. Then all you have to do is shake it to coat and pour it on your pan.
Bake them and now you will have the easiest, healthiest side dish ever made!

- Preheat oven to 425 F.
- Chop the vegetables so they are all approximately the same size.
- Cover vegetables with olive oil. Sprinkle with spices, use more of less of the spices depending on your preferences. You can always add more, but you can’t always wipe it off.
- Next spread vegetables onto a baking sheet, make sure they are spread out as much as possible.
- Roast for 10-15 minutes or until they are starting to char.
- When they are done, pour them into a bowl and cover with Parmesan cheese.
