First place the chuck roast in the crock pot and season both sides with the salt, pepper, and taco seasoning.
Cook on low for 6-8 hours or high for 4-6.
Once it is cooked through (thermometer reading at least 145) shred the meat and stir it into the juices and seasonings.
Optional step: To thicken the juices and add texture to the meat, take the meat and juice 1/2 cup to a cup, and put into a 9×13 pan.
Place in the oven and roast at 425 for 10-20 minutes.
Take it out and stir into the juices again.
Serve on your favorite taco shell with your favorite taco toppings.
