Slow Cooker Roast Tacos

Ingredients
  

  • 1 small to medium chuck roast
  • 3 T taco seasoning or 1 packet
  • 1 tsp salt
  • 1 tsp pepper
  • Taco toppings: guacamole cilantro, red onions, salsa, pico de gallo, pickled red onions, roasted corn, etc.
  • Tortillas

Method
 

  1. First place the chuck roast in the crock pot and season both sides with the salt, pepper, and taco seasoning.
  2. Cook on low for 6-8 hours or high for 4-6.
  3. Once it is cooked through (thermometer reading at least 145) shred the meat and stir it into the juices and seasonings.
  4. Optional step: To thicken the juices and add texture to the meat, take the meat and juice 1/2 cup to a cup, and put into a 9x13 pan.
  5. Place in the oven and roast at 425 for 10-20 minutes.
  6. Take it out and stir into the juices again.
  7. Serve on your favorite taco shell with your favorite taco toppings.
