Taco Soup

Vegetables, taco flavors, soup. Really this soup couldn’t be better!

This is a really healthy and delicious meal you can serve at any time of day! It is also a great one to take to a gathering as it can make a lot. I use my Souper Cubes when I make this soup as it means I will have healthy meal options in the freezer whenever I am short on time or don’t have my usual leftovers from supper.

You will find yourself making this one over and over again!

Taco Soup

Ingredients
  

  • 1-2 zucchini shredded
  • 1 pound ground meat browned
  • 1 packet of ranch or 3 T homemade
  • 1 packet of taco seasoning or 3 T homemade
  • 1 can corn
  • 1 can black beans
  • 1 28 ounce can crushed tomatoes
  • 2 cans diced tomatoes with juice
  • 1 can Rotel style tomatoes
  • 2-3 cups chicken broth

Method
 

  1. Chop peppers and onions.
  2. Sauté in olive oil until tender in a saucepan.
  3. Add ground meat and brown. Season with salt and pepper.
  4. Put the rest of the ingredients into the saucepan and simmer until everything is warm and spices have mixed. Add salt and pepper as you like.
  5. Top with taco toppings and enjoy!
