Vegetables, taco flavors, soup. Really this soup couldn’t be better!
This is a really healthy and delicious meal you can serve at any time of day! It is also a great one to take to a gathering as it can make a lot. I use my Souper Cubes when I make this soup as it means I will have healthy meal options in the freezer whenever I am short on time or don’t have my usual leftovers from supper.
You will find yourself making this one over and over again!

Ingredients
Method
- Chop peppers and onions.
- Sauté in olive oil until tender in a saucepan.
- Add ground meat and brown. Season with salt and pepper.
- Put the rest of the ingredients into the saucepan and simmer until everything is warm and spices have mixed. Add salt and pepper as you like.
- Top with taco toppings and enjoy!
