Tips for the Perfect Veggie and Egg Bowl

If you are wanting to make a ton of vegetables at once, use a really big pan or do it in smaller batches for the best texture and crispness form the sauteed vegetables.

If you want to change up the flavor a little more add a sprinkle of red pepper flakes. This will get hotter the longer you cook them so add them at the beginning of the cooking process if you like a lot of heat or near the end if you just want a touch of spice.

You can cook the eggs to your liking scrabmled, fried, over easy, sunny side up, it really doesn’t matter! Do remember that if you are using this as a meal prep you might want to slightly undercook them so they will be perfect when you reheat them.

If you want a touch more flavor, cook the veggies or eggs in butter.

Lastly, to change up the veggie and egg bowl even more, add avocado slices, cheese, or even hot sauce to add more flavor.

Meal Prep and Storage Tips

To be most time efficient when meal prepping this Veggie and Egg Bowl, cut up the vegetables when you get them home from the store. They will be meal prepped for you to use in any dish and will make sure this prep time is cut down significantly when you go to make it.

You can make the eggs in advance, of if you want fresh eggs each morning, they do not take very long to prep.

Pack these in glass storage containers like these to easily be able to move the veggie and egg bowl from the fridge to reheating to eating.

Lastly, adding a touch of water (just a splash) to the veggie and egg bowl when reheating will ensure it does not dry out and the eggs do not get rubbery in the process.
