Cheesy Veggie Egg Bowl

Ingredients
  

  • 8 eggs
  • 1 cup cottage cheese
  • 2 cups chopped mixed vegetables I used broccoli, peppers, onions, and tomatoes
  • 1/4 cup shredded cheddar cheese
  • Salt
  • Pepper to taste
  • Spray for bowls if you want

Method
 

  1. Use your favorite oven-safe glass bowls, mine are linked in my Amazon store, and mix everything in the bowl to save dishes! Pop these in the oven at 425 for 15-20 minutes or until they are set to your liking.
  2. Cool and put the lids on then store for up to 4 days! You have almost a week’s worth of healthy breakfasts made in about 30 minutes! 10 for prep and 20 to bake!
  3. Other macros according to My Fitness Pal Protein 20 grams, Carbs 8.4 grams, and Fat 15.4 grams (I used full fat for cottage cheese so you can use whatever works for you to lessen this).
  4. Use four of your favorite oven-safe glass bowls, mine are linked in my Amazon store, and spray with cooking spray or grease with butter.
  5. Divide the ingredients by four and put in the prepared baking dishes.
  6. Into each dish put: crack 2 eggs, 1/4 cup cottage cheese, 1/2 cup mixed veggies, 1 T cheddar cheese.
  7. Mix everything in the bowl to save dishes!
  8. Pop these in the oven at 425 for 15-20 minutes or until they are set to your liking.
  9. Cool and put the lids on then store for up to 4 days.
