Chicken and Veggie Stir Fry

Ingredients
  

  • Rice
  • 1 cup rice
  • 2 cups water or broth
  • Sauce
  • 1/4 -1/2 tsp salt
  • 1 T cornstarch
  • 1 cup broth chicken, vegetable, or beef
  • 1/4 cup soy sauce
  • 1/4 tsp ground ginger
  • Stir fry
  • 1 T vegetable oil
  • 6-8 ounces Chicken
  • 2 cups broccoli florets
  • 1 carrot sliced
  • 1/2 green pepper sliced
  • 1 tsp garlic
  • 1 tsp sesame seeds

Method
 

  1. Prepare rice by putting the rice, water, and salt in a sauce pan. Bring water to a boil then turn it down to a simmer and cover. Let simmer until all of the water has absorbed. If needed add more water until the rice is tender. Let sit and fluff with a fork.
  2. Mix these sauce ingredients together in a small bowl.
  3. In a large skillet heat 1 T of oil. Stir-fry the meat of choice until cooked through.
  4. Add broccoli, carrots, and peppers and cook over high heat until tender crisp, about 5 minutes.
  5. Add garlic, stir for 30 seconds.
  6. Stir in the sauce mix and add to the pan. Bring the sauce to a boil and cook while stirring for 1 minute or until thickened.
  7. Top with sesame seeds and serve over hot rice.
