Chicken Caesar Salad

Ingredients
  

  • 4 cooked chicken breasts or canned Air Fryer Chicken
  • 3 slices of thick bread
  • Butter to coat both sides of the bread
  • Garlic salt to taste
  • 1 head of green leaf lettuce or two small Romaine hearts
  • 2 T parmesan cheese
  • 1 clove garlic
  • 1 T Lemon juice
  • ½ tsp Dijon mustard
  • ½ tsp Worcestershire sauce
  • ½ cup mayonnaise
  • ¼ cup parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350 degrees. Butter both sides of each piece of bread. Season with garlic salt and place in the oven, bake until golden brown, checking in 5 minute intervals.
  2. Shred lettuce and place in a bowl. Toss in parmesan cheese.
  3. In a medium bowl, whisk together the garlic, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmesan, salt and pepper and whisk until well combined.
  4. Toss salad with dressing. Top with croutons, and serve.
  5. If packaging for lunches leave croutons off until ready to eat. These get very soggy otherwise.
  6. ** You can use store-bought croutons and Caesar dressing if you would like.
